Sweet focaccia

The concept of these focaccias is simple: focaccia dough with sweet filling and topping.

They are super versatile as you can choose whatever filling and topping you want.

You can also play with the dough varying the flours you are using. You will need to adjust the water amount though.

I tested different flavors that were all amazing.

  • Caramel

             This sweet focaccia has an amazing caramel flavor. It is stuffed with caramel and topped with granulated sugar and brown sugar before baking. A nice drizzle of caramel before serving complements nicely this treat.

  • Chocolate

             This chocolate focaccia will satisfy your chocolate cravings but while remaining pretty low in sugar.

              The dough is filled and topped with melted chocolate and chocolate strudel.

  • Pistachio

             This pistachio focaccia is filled and topped with pistachio paste and crushed toasted pistachio giving this bread a light sweet and deep nutty flavor.

              A nice treat for pistachio lovers.

  • Hazelnut   

             With hazelnut spread or butter and crushed roasted hazelnut this focaccia has a deep nutty flavor for a slight hint of sweetness. The perfect treat.

Storage

Those focaccia can be stored for several days in a container at room temperature.

The crisp and airy texture of the focaccia in a sweet version, a nice discovery that will satisfy your sweet tooth.

Ingredients
  • Dough:
    • 250g flour (75g Spelt flour, 25g dark rye flour,100g all-purpose flour)
    • 150ml lukewarm water
    • ¾ tsp active dry yeast
    • 1 tbsp butter
    • ¼ tsp salt
    • 1 tbsp granulated sugar

  • Filling:
    • Chocolate chips
    • Nuts (pistachios, hazelnuts…)
    • Chocolate hazelnut spread
    • Caramel
    • Skor bites
    • etc.

Instructions
  1. Mix water, sugar and active dry yeast. Let sitat room temperature for 10min or until frothy
  2. Add the flours, salt and melted butter, and mixwell.
  3. Form a ball on the counter and cover with thebowl turned upside down. Let rest for 15 min
  4. Perform coil folds until the dough gets smoothon the surface.
  5. Grease the bowl, put the dough back into thebowl, cover and let rise for 2h
  6. Divide into 4 pieces of dough (equal weight).Shape into balls, cover and let rise for 2h.
  7. Preheat oven at 350F / 180C
  8. Grease 4 tartlet pans (about 3 ½ inch or 9cmdiameter)
  9. Take onedough ball, flatten it with your hands on the counter, spread your filling ofchoice, fold the dough on itself and repeat at least once. Form a ball andplace it in a grease tartlet shell.
  10. Repeat with the other balls
  11. Bake for 20 min or until golden brown.
  12. Let cool slightly before serving
  13. Enjoy!
