Rum and candied fruit are an all time favorite for me.
Using rum really enhances the flavors.
I am soaking the candied fruit and raisins in rum overnight before straining them and adding them to the brioche dough.
And don't throw away that liquid gold, you can use it to make a delicious and flavorful frosting. If you don't like run, you can replace it with orange juice.
Don't worry about the alcohol in the brioche, it disappears during the baking process.
The result of this flavor combination is just amazing.
We get a moist and fluffy brioche packed with flavors, an amazing treat to share with friends and family.
A must for the holidays, this brioche is filled with candied orange and lemon peels and raisins soaked in rum and with a rum flavored frosting. And it tastes as good as it looks ;)
