Chouquettes

Those are “Petits choux” sprinkled with coarse sugar, a classic of French pastry, simple and yet so delicious.

This recipe yields 30 chouquettes.

They can be stored at room temperature in a sealed container for several days.

When you want to eat them, slightly reheat them in the oven at 300F / 150C for about 5-10min

Be careful, they can burn quickly towards the end of cooking.

How can you be creative with those?

A lot can be done with chou pastry, both sweet and savory.

for instance, you can add some cocoa and mini chocolate chips in the batter, you will need to adjust slightly the milk.

You can also put bits of ham or bacon and cheese for the perfect appetizer.

Ingredients
  • ½ cup water
  • ½ cup milk
  • ½ cup (1 stick = 114g) butter
  • A pinch of salt
  • 1 tsp sugar
  • 1 cup all-purpose flour
  • 4 eggs, large
  • Coarse sugar
Instructions
  1. Preheat the oven at 400F / 200C
  2. In a sauce pan, heat over medium-high heatwater, sugar milk and butter.
  3. Once the butter is completely melted, add the flour and mix well.
  4. Dry the dough on medium heat for about 1-2 min until it does not stick to the edges of the pan
  5. Remove from heat and transfer the dough to abowl
  6. Let rest for about 5min
  7. Add the eggs one by one making sure to fullyincorporate one before adding the next.
  8. Fill a pipping bag
  9. Line baking trays with parchment paper.
  10. Pipe 3cm / 1 ¼ inch diameter disks making surethey are spaced by minimum 2inches from one another
  11. Sprinkle coarse sugar on top on each choux pastry
  12. Bake for about 20min
  13. Let cool
