Cherry clafoutis

Clafoutis are super easy to make and so satisfying. It is a very versatile recipe as you can make clafoutis with almost any fruit. The classic recipe calls for cherries but you could use any other fruit - ie. peaches, prunes, raspberries etc.

Perfect for sharing, they are light in texture and disappear fast.

Ingredients
  • 2 eggs
  • 30g granulated sugar
  • 5g vanilla sugar
  • 1 pinch of salt
  • 55g all-purpose flour
  • 50ml heavy cream
  • 150ml milk
  • 1 cup pitted cherries
  • Powdered sugar

Instructions
  1. Grease the molds
  2. Preheat the oven at 350F / 180C
  3. Beat the eggs in a medium bowl, add in the cream and milk
  4. Add sugars and salt, mix well
  5. Incorporate the flour making sure there are nolumps
  6. Pour the cherries in the molds
  7. Pour over the batter
  8. Bake for about 40min or until golden brown
  9. Let cool slightly. Sprinkle powder sugar over just before serving
  10. Enjoy!

Can be stored in the fridge but needs to be eaten quickly (within a day or two)
