Banana Sourdough Pancakes

Those pancakes are a delicious breakfast but do need some planning.

The sourdough gives a really good slight sour taste.

Elevate those pancakes by adding some chocolate chips, pecans pieces, add fruit in your plate.

They are best served right after baking.

If you have too much batter, cook the pancakes and store them in the fridge for a couple of days.

You can also freeze the pancakes for a couple of months. You can reheat them in the oven in a baking tray ay 350F / 180C for about 30min.

Those pancakes are super easy to make, delicious and nutritious. The perfect healthy breakfast to start your day!

Ingredients
  • 1 mashed banana
  • 1 large egg
  • 80g flour
  • 80gr milk
  • 60g ripe sourdough starter
  • 1 gr salt
  • 20gr neutral oil
  • Optional: chocolate chips, pecan pieces…
Instructions
  1. In a small bowl, mix together flour and salt.
  2. Add the starter and mix.
  3. Add the milk, mashed banana and egg yolk.
  4. Mix in the oil
  5. Add in the egg white and mix until just combined.
  6. Cover with plastic wrap and let sit for 2h at room temp.
  7. Then let rest overnight or for 8-12h in the fridge.
  8. In the morning, bake your pancakes in a pan om medium heat.
  9. Enjoy!
