Banana Sourdough Pancakes

Ingredients

  • 1 mashed banana
  • 1 large egg
  • 80g flour
  • 80gr milk
  • 60g ripe sourdough starter
  • 1 gr salt
  • 20gr neutral oil
  • Optional: chocolate chips, pecan pieces…

Instructions

  1. In a small bowl, mix together flour and salt.
  2. Add the starter and mix.
  3. Add the milk, mashed banana and egg yolk.
  4. Mix in the oil
  5. Add in the egg white and mix until just combined.
  6. Cover with plastic wrap and let sit for 2h at room temp.
  7. Then let rest overnight or for 8-12h in the fridge.
  8. In the morning, bake your pancakes in a pan om medium heat.
  9. Enjoy!
