Banana Sourdough Pancakes

Ingredients
- 1 mashed banana
- 1 large egg
- 80g flour
- 80gr milk
- 60g ripe sourdough starter
- 1 gr salt
- 20gr neutral oil
- Optional: chocolate chips, pecan pieces…
Instructions
- In a small bowl, mix together flour and salt.
- Add the starter and mix.
- Add the milk, mashed banana and egg yolk.
- Mix in the oil
- Add in the egg white and mix until just combined.
- Cover with plastic wrap and let sit for 2h at room temp.
- Then let rest overnight or for 8-12h in the fridge.
- In the morning, bake your pancakes in a pan om medium heat.
- Enjoy!
