Chocolate hazelnut sandwich cookies

I love the classical combination chocolate and hazelnut and those sandwich cookies are the perfect treat.

They are easy to make but do take some time.

Tips for a smoother process:

  • Plan correctly
  • You can prepare the biscuits well in advance, like a couple of days before the assembly. Make sure to store them in an airtight container.
  • If you want to bake the biscuits the same day of the assembly, you can also prepare the dough the day before and store it in the fridge until ready tp bake it and finalize the cookies.

Try other variations

Sandwich cookies are very versatile, you can play with the flavors of the filling or even the biscuit.

Check out my recipe for chocolate caramel sandwich cookies or extra chocolate sandwich cookies.

Instructions

Prepare the biscuits:

  7. Preheat the oven at 350F/180C
  8. Bake for 10 min and let cool completely on a wire rack

Assembly

  1. Using a spoon or a piping bag, apply 1 to 1.5tsp of chocolate caramel ganache on the bottom of half the cookies
  2. Top with the other half of the cookies and press lightly to spread the ganache to the edge of the cookies.
  3. If desired you can decorate the sandwich cookies: dip 1/3 of each cookie in the melted dark chocolate and then dip incrushed hazelnuts
  4. Enjoy!
