Grapes Schiacciata
This amazing Italian sweet focaccia is a must try and a nice treat in Summer days

Ingredients
- 250g grapes
- 100ml lukewarm water
- 200g (1 ½ cup) flour
- 35g granulated sugar
- 2 tbsp olive oil
- 3g (1/2 tsp) active dry yeast
- Powdered sugar, for topping
Instructions
- Prepare the focaccia dough.
- In the lukewarm water, mix in sugar and active dry yeast. Let sit for 10 min or until frothy. Add the flour and 1tbsp olive oil.
- Once all combined, place the dough on thecounter and turn the bowl upside down to cover it, let rest for 15 min.
- Put some olive oil on your hands and makeseveral coil folds to get a smooth dough (you just need to scoop and lift thedough with your hands several times, rotating it 45 degrees when placing itdown on the counter each time. Once the dough is smooth, grease your bowl andplace the dough back in it.
- Cover and let rest for 2h at room temperature.
- Divide the dough in 4 equal size pieces of dough. Shape each into a ball, put on a plate, cover and let rise again for 2h
- Preheat oven at 350F / 180C
- Divide the grapes into 4. One dough at a time, spread the dough with your fingers covered with olive oil on the counter, stuff the dough with grapes and fold. Place the focaccia in tartlet pan previously greased.
- Repeat with the other doughs.
- Bake for about 20min or golden brown.
- Let cool down a bit.
- Plate, sprinkle with powdered sugar and enjoy.
