Fluffy Pancakes

Those light, airy and fluffy pancakes are perfect for breakfast or brunch!

Ingredients

  • 2 eggs
  • 20gr sugar
  • 1tsp vanilla extract
  • 1tsp lemon juice
  • 1/3 cup self-rising flour or 1/3 all-purpose flour + ½ tsp baking powder
  • 3 tbsp Greek yoghurt
  • 2 tbsp water

Instructions

  1. Separate egg yolks and whites in two bowls.
  2. Whisk egg yolks with vanilla, yoghurt and water. Set aside.
  3. Beat egg whites and add sugar and lemon to it. Finish beating until meringue consistency and getting soft peaks
  4. Add flour to the egg yolks mixture and mix well
  5. Fold in gently the meringue
  6. Slightly grease a deep large skillet – heat onmedium high heat.
  7. Spoon ¾ of the preparation in the hot skilletforming 3 pancakes
  8. Pour 3 tbsp of hot water in the skillet andclose the lid
  9. Once the water has evaporated remove the lid andadd the remaining of the preparation between the 3 pancakes
  10. Add another 2 tbsp hot water and cover
  11. Once evaporated, flip the pancakes
  12. Let cook for an additional couple of min
  13. Serve
