Fluffy Pancakes
Those light, airy and fluffy pancakes are perfect for breakfast or brunch!

Ingredients
- 2 eggs
- 20gr sugar
- 1tsp vanilla extract
- 1tsp lemon juice
- 1/3 cup self-rising flour or 1/3 all-purpose flour + ½ tsp baking powder
- 3 tbsp Greek yoghurt
- 2 tbsp water
Instructions
- Separate egg yolks and whites in two bowls.
- Whisk egg yolks with vanilla, yoghurt and water. Set aside.
- Beat egg whites and add sugar and lemon to it. Finish beating until meringue consistency and getting soft peaks
- Add flour to the egg yolks mixture and mix well
- Fold in gently the meringue
- Slightly grease a deep large skillet – heat onmedium high heat.
- Spoon ¾ of the preparation in the hot skilletforming 3 pancakes
- Pour 3 tbsp of hot water in the skillet andclose the lid
- Once the water has evaporated remove the lid andadd the remaining of the preparation between the 3 pancakes
- Add another 2 tbsp hot water and cover
- Once evaporated, flip the pancakes
- Let cook for an additional couple of min
- Serve
