Chocolate hazelnut French toasts

So simple and yet Insanely good. This chocolate hazelnut French toasts are the perfect breakfast / brunch that you have to try.

Ingredients

  • Chocolate hazelnut spread:
    • 1 cup milk chocolate chips
    • 1 cup semisweet chocolate chips
    • 2 tbsp unsweetened cocoa powder
    • ¾ cup hazelnut paste

  • 1 loaf Old brioche bread

  • Custard:
    • 2 eggs
    • 100ml milk

  • Coating:
    • 1/3 cup granulated sugar
    • Cinnamon

  • Toppings:  
    • 1/4 cup (50g) semisweet chocolate
    • 1/4 cup (65ml) heavy cream
    • Crushed toasted hazelnuts

Instructions

  1. Prepare the chocolate hazelnut spread: melt the chocolate in a water bath. Remove from heat and mix in the cocoa powder and the hazelnut spread. Set aside.
  2. Either cut 1inch / 2,5 cm thick slices of brioche or pull the balls apart. An 8-9 inch long brioche will yield about 8 slices so 4 portions (2 French toasts per person)
  3. In a deep dish, crack eggs and whisk until foamy. Add in the milk
  4. Dip the brioches slices in the custard for 1-2min, make sure they are well coated and humid, soaking the custard
  5. Heat a large pan and melt ½ tbsp butter on medium high heat
  6. Take the brioche slices and transfer them into the pan
  7. Cook the French toasts on each side until golden (5-10min)
  8. In the meantime, you can prepare the sugarcoating: pour sugar and cinnamon in a plate
  9. Prepare the chocolate sauce: heat the heavycream. Pour it over the chocolate and let sit for 2min. mix well. Set aside.
  10. Once the French toasts are cooked, roll them into the cinnamon sugar and set them aside in a plate
  11. Stuff the French toasts: fill a pastry bag with the chocolate hazelnut spread. With a knife, cut a hole in each slice cutting in the bottom through the thickness of the slice
  12. Fill each slice with chocolate hazelnut spread
  13. Plate the French toasts, drizzle chocolate sauce over and sprinkle crushed toasted hazelnut. You can serve with whipped cream.

Notes:

  • Best served the same day
  • You can prepare the chocolate hazelnut spread in advance and store it in a jar. If it hardens, you can immerse the jar in hot water for 5-10min so that it becomes liquid and can be piped in the French toasts.
