Ingredients

  • 300g bread flour
  • 90g ripe sourdough starter
  • 200g water, room temperature
  • 6g salt
  • ¼ cup dark chocolate chips
  • ¼ cup milk chocolate chips
  • ¼ cup white chocolate chips

Instructions

  1. In a large bowl, mix water and starter until the starter is dissolved.
  2. Add half the flour and mix well
  3. Mix in the salt
  4. Finish adding the flour and mix until no flouris left.
  5. Mix in the chocolate chips.
  6. Cover and let rest for 1h at room temperature
  7. Make a few folds, cover and let rise at roomtemperature for 8-12h
  8. Prepare a load pan by greasing it and lining apiece of parchment paper in the bottom
  9. Shape the bread on a counter and place it in thepan. Cover and let rest for 45min
  10. Preheat the oven at 240 C / 460F
  11. Bake for 40min
  12. Let cool on a wire rack
